Hiroya is a standing sushi counter one minute from Daimon station. Tachigui — 立喰い — means you eat on your feet. There are no seats, and no ceremony about it: a noren, a counter, warm light.
The quiet part is the pedigree. This is the standing-format offshoot of Sushi Hiroya, a Tabelog Top-100 sushiya — the same hands, transplanted to a counter where standing keeps the price within reach. Watch the work: rice pressed in seconds, the brush of nikiri, each piece set down in front of you and gone before the next arrives.
